Fried Lotus Root with Filling

One of my favorite things about living in a different part of the world is experiencing new produce.  Living in the Seattle area, there are some wonderful Japanese grocery stores that carry items commonly found in Japan and not in the US.  Being married to a Japanese man, I've been introduced to many of these "special ingredients."  But now, I get to experiment with many of these ingredients because not only are they available, they are quiet affordable since they are grown here!

Today we tried a new recipe for with lotus root.  Lotus root is an edible root of a lotus plant.  It is a really neat shape, with big holes in a pattern.  The vegetable is very crunchy, even after being cooked, which makes a delightful addition to recipes.  I've been a fan for a while, but have never cooked it myself.


After getting a new cookbook (it is so interesting with the recipe in both Japanese and English), I saw a recipe for fried lotus root with filling and wanted to try it.  I was talking to another mom from the park about cooking and she mentioned a very similar recipe that had peaked my interest.  So, I was so excited to see this recipe detailing exactly how to make it.


I purchased the lotus root at my favorite organic grocery shop and we already had the rest of the ingredients.  Well, it called for ground pork, but I had chicken thigh in the freezer, which I ground in the food processor instead of going to a second store.  I always have to play with recipes!

I peeled and sliced the lotus root.  Then I soaked it while prepping other ingredients.  After grinding up the chicken, I added onion, ginger, sake and salt.  I dried the lotus root, dusted one side of it in flour and pressed the meat inside, making a sandwich.  I then rolled the whole thing in potato starch.

After heating the oil on the stove, we deep fried the lotus root.  We meaning my husband.  It was a team effort.


They definitely were not a pretty as the picture, but boy were they tasty!  A resounding success that I'm sure we will try again someday.
